Fino La Ina from Lustau is a classic of Jerez, recognized for its dry, sharp, and very gastronomic style. This fino represents the tradition of the criaderas and soleras of the Jerez region, with a very pure expression of Palomino Fino and biological aging under flor.
Color: Pale straw yellow, clean and bright, with steel reflections that reveal its biological aging in oak casks. Clarity and visual liveliness are characteristics of the finos from Jerez produced by Lustau, which particularly cares for the stability and presentation of its wines.
Nose: Very marked aromas of flor yeast, raw almond, and saline notes, with memories of bread dough, dry hay, and light hints of chamomile and citrus peel. The aromatic intensity is fine and penetrating, typical of the finos from the Jerez region, where the flor veil adds complexity and very defined biological nuances.
Palate: Dry, sharp, and very fresh, with a saline entry and a light yet flavorful passage, where notes of almond, soft nuts, and a iodized background stand out. The Lustau winery, a historical reference of the Marco de Jerez, is headquartered in Jerez de la Frontera, in southern Spain. It mainly works with Palomino Fino, Pedro Ximénez, and Moscatel, varieties that fully express themselves in the albariza soils and under the influence of Atlantic winds. Its vineyards are distributed in classic payments, where the combination of warm climate and sea breezes favors balanced ripening of the grapes.
